Vegetarian steak tartare with Toma'muse tomatoes

Ingredients for 4 people

  • 2 tbsp Toma'muse
  • 1 tbsp mustard
  • Pepper and salt
  • 1 tbsp sherry vinegar
  • 5 tbsp olive oil
  • 4 yellow Toma'color tomatoes

Preparation

  • Toma'muse tomatoes cut into four and remove seeds but keep separate.
  • Finely dice the tomato flesh.
  • Brown the diced tomatoes in olive oil. Let the liquid evaporate and season with salt and pepper and a tablespoon of mustard.
  • Drain the cubes in a sieve and keep the liquid.
  • Let the mixture cool and season with salt and pepper.
  • Take a serving ring and fill it with the Toma'muse cubes. Press down well.
  • Dressing: 4 tablespoons of olive oil, 1 tablespoon of sherry vinegar, salt and pepper, juice of tomato and seeds.
  • Stir all this well and dress on the plate.
  • Finish with green herbs and a finely chopped yellow tomato.
