Toma’muse bruschetta with jalapeno dressing

Ingredients for 4 people

  • 2 x 200 g Toma'muse tomatoes
  • 8 slices of sourdough bread, grilled
  • 250 g crème fraîche (see tip)
  • Grilled lime, for serving
  • Dressing
  • 1 tablespoon drained pickled jalapeño
  • 1/4 cup coriander leaves
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon caster sugar
  • 4 tablespoons extra virgin olive oil
  • 1 tablespoon of lime juice

Preparation

  • Cut the Toma'muse tomatoes in three widthwise. Place them in a shallow dish and season with salt and pepper.
  • Mix all the ingredients of the dressing in a blender or small food processor and blend until smooth. Spoon in the tomatoes. Cover everything and set aside to marinate for 15 minutes.
  • Spread a thick layer of crème fraîche on the sourdough bread and spoon the tomatoes on top. Serve the dish with lime.
  • Tip: You can also replace the crème fraîche with soft goat's cheese or cream cheese.
