Toma'gusto vegetable casserole dish

Ingredients for 4 people

  • 8 Toma'gusto tomatoes
  • 2 aubergines
  • 1½ courgettes
  • 2 bulbs of mozzarella
  • 2 red onions
  • 8 tablespoons of traditional olive oil
  • 2 cloves of garlic
  • 15 g sprigs of rosemary
  • Pinch of salt and pepper

Preparation

  • Heat the oven for to 200 °C.
  • Cut the aubergines, courgette, mozzarella and Toma'gusto tomatoes into ½ cm slices. Cut the onions into rings. Grease the ovenproof dish.
  • With the hand blender, grind the oil and garlic into garlic oil. Season with pepper and salt, if necessary.
  • Heat 1 tablespoon of garlic oil in a frying pan and fry the aubergine in parts over medium-high heat for 5 min.
  • Mix the rest of the garlic oil through the courgette.
  • Alternately place the slices of aubergine, courgette, tomato, mozzarella and onion upright in the dish.
  • Cut the rosemary sprigs into quarters and tuck them between the vegetables. Keep a few pieces behind.
  • Roast the vegetables in the oven for about 40 min until tender. Garnish with the rest of the rosemary.
