Toma'chef salad with Boursin and herb coulis

Ingredients for 4 people

  • 2 tubs of small Toma'chef tomatoes
  • 1 jar of Boursin fresh herbs
  • 50 grams of fried macadamia nuts or cashew nuts
  • 1 red onion
  • 1 lemon
  • Olive oil

Ingredients herb coulis

  • 500 grams young spinach
  • Fresh herbs (coriander, parsley leaf, tarragon, basil & chives)
  • 30 cl chicken stock

Preparation

  • Boil the spinach for 30 seconds, then drain and cool in cold water or ice water.
  • Squeeze the liquid from the spinach and put it in a blender.
  • Add the herbs, warm stock, 5 tablespoons of olive oil, pepper and salt and blend until smooth.
  • Blanch the tomatoes for 8 to 12 seconds and then quench in cold water.
  • Peel the tomatoes
  • Make a nice circle with the herb coulis, Place one tablespoon of Boursin in the centre of the circle this is the base for your tomato arrangement.
  • Build up the tomatoes in different colours.
  • Finish with zest of lemon, red onion, nuts, olive oil, salt and pepper.
