Summer couscous with Toma'dor tomatoes

Ingredients for 4 people

  • 250 g Toma'dor tomatoes
  • 250 g instant couscous
  • 1 aubergine
  • 1 courgette
  • 150 g halloumi
  • Herbs: a few sprigs of flat parsley and a bunch of mint
  • Juice of half a lime
  • 1 teaspoon liquid honey
  • Pepper and salt

Preparation

  • Prepare the couscous according to the instructions on the packet.
  • Wash the aubergine and courgette and dice them. Halve the Toma'dor tomatoes.
  • Grill the vegetables and halloumi.
  • Wash the herbs, shake them dry and finely chop the leaves.
  • Squeeze the limes and mix the juice with honey.
  • Season the couscous to taste with salt and pepper. Add the grilled vegetables, halloumi and Toma'dor tomatoes and mix. Finish with herbs and lime juice.
