Spaghetti Toma'muse with feta cheese, olives and rocket salad

Ingredients for 4 people

  • 2 tubs of Toma'muse tomatoes
  • 400 grams of spaghetti
  • 2 large garlic cloves, crushed
  • 150 grams of mixed olives, pitted and coarsely chopped
  • 250 grams of feta cheese
  • 60 grams of rocket
  • 100 ml olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon granulated sugar

Preparation

  • Heat the oven for to 200°C.
  • Cut the Toma'muse tomatoes crosswise into three and place them on a baking tray.
  • Mix the oil, vinegar, mustard, garlic and sugar. Pour this mixture over the tomatoes.
  • Add the olives and season with salt and pepper.
  • Place the baking tray in the oven for 15 minutes.
  • Meanwhile, cook the spaghetti in a large saucepan of salted water, according to the instructions, until tender.
  • Add the Toma'muse tomatoes along with the drained pasta to the large saucepan.
  • Crumble the feta over the mixture and add the rocket.
