Pasta pesto with Toma'chef tomatoes

Ingredients for 4 people

  • 2 tubs of small Toma'chef tomatoes
  • 500gram pasta shells
  • 3 jars of basil
  • 80gram of Parmesan cheese
  • 30grams of pine nuts
  • 3 cloves of garlicrocket
  • Olive oil
  • Pepper and salt

Preparation

  • Blanch the tomatoes for 8-12 seconds, then plunge in cold water.
  • Peel the tomatoes.
  • Pick the basil leaves and put them in the blender. Add the pine nuts, garlic, Parmesan cheese, 15 ml olive oil, pepper and salt. Blend until you have a nice pesto.
  • Cook the pasta in salted water.
  • Mix the drained pasta with the pesto. Afterwards, add the tomatoes and serve on a plate.
  • Top with arugula and Parmesan cheese.
