Oysters with Toma'chef tomatoes

Ingredients for 4 people

  • 1 bowl of small Toma'chef tomatoes
  • 4 oysters
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • ½ lime juice
  • Pinch of black pepper

Preparation

  • Grab the oyster with the flat shell facing up with one hand.
  • Stab between the two shell halves with an oyster knife. Do this straight into the hinge. This is the more pointed part of the oyster. Be careful not to pry. That could break the shell and you risk flaking the oyster meat.
  • Slide the knife under the oyster to loosen it from the lower shell.
  • Finely chop different colours of Toma'chef tomatoes.
  • Vinaigrette: olive oil, soy sauce and lime juice.
  • Dress Toma'chef tomatoes on the oyster and finish with vinaigrette.
  • Finish with a turn of the pepper mill.
