Oriental curry with chicken and Toma'tasty

Ingredients for 4 people

  • 8 Toma'tasty Tomatoes
  • 500g chicken breast
  • 1 onion
  • 2 cloves of garlic
  • 3 sprigs of fresh coriander
  • 10g ginger
  • 3 teaspoons red curry paste
  • 1 tablespoon of soy sauce
  • 200ml coconut milk
  • 300g jasmine rice
  • 4 tablespoons olive oil
  • Pepper and salt

Preparation

  • Chop the onion and crush the garlic. Quarter the Toma'tasty tomatoes and peel and grate the ginger. Remove as much chicken meat as possible from the legs.
  • Heat olive oil in a pan and fry the chicken for 5 minutes. Remove the chicken from the pan, add a splash of olive oil and sauté the garlic and onion. Add the red curry paste and grated ginger and simmer for 1 minute.
  • Add the Toma'tasty tomatoes, chicken, coconut milk and soy sauce and simmer on a low heat for 20 minutes. Add salt and pepper to taste.
  • Cook the jasmine rice according to the instructions on the packet.
  • Serve in a bowl and top with fresh coriander.
