Gazpacho from Toma’gusto

Ingredients for 4 people

  • 1 kg Toma'gusto tomatoes
  • 50 ml olive oil
  • White balsamic vinegar
  • Clove of garlic
  • Tabasco
  • Pepper and salt

Preparation

  • Roughly chop the tomatoes and peel a clove of garlic.
  • Blend the tomatoes together with the garlic clove. (It is best to use a blender or hand blender for this).
  • Pass the juice through a fine sieve.
  • Add a little olive oil to the mixture.
  • If the gazpacho is still a little too thick, add a dash of water.
  • Season with the white balsamic vinegar, a little Tabasco, pepper and salt.
  • Finish with a dash of olive oil and a leaf of sorrel, if desired.
