Chutney of Toma'gusto tomatoes and ginger

Ingredients for 4 people

  • 800 gr Toma'gusto tomatoes finely chopped (skin and seeds removed)
  • 2 chilli peppers (without seeds)
  • 2 shallots
  • 15 gr peeled ginger
  • 2 cloves of garlic
  • 400 gr cane sugar
  • 200 ml white wine vinegar
  • 1 tablespoon of mustard seeds
  • Salt and pepper

Preparation

  • Put the chilli, shallots, ginger, garlic, cane sugar and white wine vinegar in a blender and blend to a smooth paste.
  • Pour over into a sauce pan and add the Toma'gusto tomatoes and mustard seeds.
  • Simmer until syrupy and season with salt and pepper. Leave to cool for use.
  • This chutney can easily be kept for 3 weeks in a sealed jar in the fridge.
