Chickpea salad with Toma'dor and feta cheese

Ingredients for 2 people

  • 1 bowl of Toma'dor tomatoes
  • 1 glass jar of chickpeas
  • 1 red onion
  • 1 bunch of leaf parsley
  • 100 g feta cheese
  • 3 tablespoons of olive oil
  • 1 teaspoon white wine vinegar
  • Pepper and salt

Preparation

  • Remove the chickpeas from the jar, rinse under water and drain.
  • Halve the Toma'dor tomatoes.
  • Peel the red onion and cut into fine rings.
  • Wash the parsley and chop finely.
  • Take a nice bowl and mix in it the chickpeas with the halved Toma'dor tomatoes, the red onion rings and the finely chopped parsley.
  • Season with salt and pepper and mix in the olive oil and white wine vinegar.
  • Finish with some crumbled feta.
