Ingredients for 4 people

  • 4 Toma'gusto tomatoes
  • 2 tbsp sushi vinegar
  • 4 tbsp olive oil
  • Edible flowers
  • Juice of ¼ lemon
  • 4 green tomatoes (evergreen)
  • 20 g parmesan shavings
  • Sprig of spring onion
  • Pepper and salt

Preparation

  • Slice Toma'gusto tomatoes into thin slices.
  • Season with sushi vinegar, salt and pepper and olive oil.
  • Place Toma'gusto tomatoes on plate, sprinkle with lemon juice and sushi vinegar.
  • Season with salt and pepper and drops of olive oil.
  • Chop green tomatoes and place on the carpaccio
  • Finish with spring onion, edible flowers and parmesan flakes.
