Bruschetta with Toma'chef & goat cheese

Ingredients for 4 people

  • 1 bowl of small Toma'chef tomatoes
  • 1 baguette
  • 1 jar of spreadable goat cheese
  • 1 red onion
  • 1 clove of garlic
  • 1 can of anchovies
  • 1 container of physalis

Preparation

  • Blanch the tomatoes for 8 to 12 seconds, then scald in ice water.
  • Heat the oven to 200 degrees.
  • Slice the baguette lengthwise into thin even slices.
  • Drizzle the bread with olive oil, salt and then smear with garlic clove.
  • Peel the tomatoes.
  • Stick the buns in the oven for 6 minutes until crispy, then leave to cool.
  • Spread the goat cheese on a sandwich and afterwards garnish with the tomatoes (use different colours and different shapes).
  • Use one physalis per sandwich, cut it in two and arrange it along with the sandwich.
  • Cut the anchovies into long strips, the red onion into rounds and serve on the roll.
  • Finish with salt, pepper, olive oil and fresh herbs (coriander, dill, chives, shiso, etc.).
