Tartare of Toma’Dor tomatoes and melon


  • ½ cavaillon melon cut into cubes
  • 10 Toma’Dor tomatoes
  • 2 slices of Parma ham, crispy baked at 180°C in 8 to 10 minutes
  • Extra virgin olive oil
  • Black pepper
  • Fleur de sel
  • Fresh basil shredded
  • 1 to 2 tsp lemon juice
  • Mozzarella or melon sorbet to top it off

Type of dish



  • Bake the Parma ham in the preheated oven at 180°C for 8 to 10 minutes
  • Mix the tomatoes with the melon cubes and season with some lemon, pepper, salt and olive oil
  • Let it marinate for 10 minutes and then work through the basil chips
  • Serve with the Parma ham and the mozzarella or sorbet
