Stuffed Toma'Chef with cauliflower rice

Ingredients

  • 4 large Toma’Chef tomatoes
  • 300g cauliflower rice
  • 1 finely chopped spring onion
  • 1 chopped bell pepper
  • 100g diced tomato
  • coriander
  • pepper and salt

Method

  • Cut the head off the Toma’Chef tomatoes and hollow them out
  • Mix the cauliflower rice with the spring onions, diced tomato and chopped bell pepper and season with salt and pepper and possibly coriander.
  • Fill the Toma’Chef tomatoes with this mixture
  • Stir fry in a pan with some olive oil
