
Stuffed Toma'Chef with cauliflower rice

Ingredients
- 4 large Toma’Chef tomatoes
- 300g cauliflower rice
- 1 finely chopped spring onion
- 1 chopped bell pepper
- 100g diced tomato
- coriander
- pepper and salt

Method
- Cut the head off the Toma’Chef tomatoes and hollow them out
- Mix the cauliflower rice with the spring onions, diced tomato and chopped bell pepper and season with salt and pepper and possibly coriander.
- Fill the Toma’Chef tomatoes with this mixture
- Stir fry in a pan with some olive oil
