
Chickpea salad with Toma'Dor tomatoes and feta

Ingredients
Serves 2
- 1 glass jar of chickpeas
- 1 tray of Toma’Dor tomatoes
- 1 red onion
- 1 bunch of leaf parsley
- 100 g feta
- 3 tbsp. olive oil
- 1 1/2 tsp. white wine vinegar
- Pepper and salt to taste

Method
- Put the chickpeas in a sieve and rinse them thoroughly. Allow the chickpeas to drain.
- Halve the Toma’Dor tomatoes.
- Peel the red onion and cut it into thin slices.
- Rinse and chop the parsley.
- Take a serving bowl and mix the chickpeas with the halved Toma’Dor tomatoes, the red onion slices and the chopped parsley.
- Add salt and pepper to taste. Mix the olive oil and the white wine vinegar and pour it over the chickpeas. Mix the salad.
- Sprinkle feta crumbs on to the chickpeas.
